Laid by our free-ranging guinea fowl, these eggs are generally slightly smaller than chicken eggs but boast a much larger, richer yolk and an incredibly creamy flavor. They also have extra-thick shells, which gives them an excellent shelf life. They are a must-try for foodies!

Are the eggs washed?

When a bird lays an egg, she coats it in a natural protective layer called a "bloom." This bloom seals the pores of the shell and keeps harmful bacteria out. Washing the egg removes this defense and can actually force bacteria inside. We keep our coops clean and our hens healthy so while we may brush bedding and feathers off before placing them in the cartons, the eggs you buy come with their natural bloom.

How long do farm-fresh eggs last?


Because the bloom is intact, they will last for several months in the refrigerator. While farm fresh eggs CAN be kept at room temperature, once they have been refrigerated, they should be kept refrigerated so they don't sweat which can break down that protective bloom.
